This West Coast-style American IPA showcases a vibrant hop profile driven by Mosaic Cryo, Rakau, Citra, and Cashmere. A lean, clean malt bill provides a neutral canvas for the intense sensory experience. Aromas of overripe stonefruit and bright grapefruit lead into a palate defined by juicy berries and a classic resinous backbone from the Mosaic Cryo. True to its Westie roots, it displays exceptional clarity and a pale straw hue. The medium-to-firm bitterness hits the mid-palate before settling into a long, dry finish that emphasizes citrus zest and piney oils, inviting the next sip with its crisp, refreshing character.
Appearance. Light straw color (approximately 3-4 SRM) with brilliant clarity. Pours with a medium-sized, persistent white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring prominent notes of overripe stonefruit, grapefruit zest, and mixed berries. Distinctive resinous pine and subtle floral undertones. Very low, clean, grainy malt character with a neutral fermentation profile.
Taste. Initial hop-forward impression of citrus and stonefruit. Medium-high hop bitterness provides a firm structure. Flavors of grapefruit, blueberry, and resinous pine dominate. The malt flavor is low and neutral, supporting the hops without sweetness. Finish is dry and crisp with a lingering, clean bitterness and a hoppy, resinous aftertaste.
Mouthfeel. Medium-light body with a smooth, crisp texture. Moderate to high carbonation provides a lively feel. A very light, well-integrated alcohol warmth is present. No astringency.
