This luxurious American Stout is a sensory journey into a 'Rum Ball' holiday treat, showcasing an intricate blend of flavors from twelve months in Cape Byron Distillery Single Malt barrels and six months in sherry casks. The profile is anchored by a dense, roasted malt foundation, which erupts with the aromatic intensity of toasted coconut and cacao nibs. Rich chocolate and creamy vanilla dominate the palate, supported by the warming, sophisticated character of single malt whisky and subtle dark fruit from the wood. Despite its strength, it maintains a structured bitterness, finishing with a lingering, dessert-like complexity and a smooth, well-integrated alcohol presence.
Appearance. Jet black and completely opaque (SRM 40+). Pours with a dense, persistent light-brown head that demonstrates excellent retention and leaves thick, creamy lacing on the glass.
Aroma. High intensity with dominant notes of dark chocolate, toasted coconut, and Madagascar vanilla. The barrel influence is prominent, offering distinct single malt whisky notes and toasted oak alongside a vinous, dried-fruit hint from the sherry casks. A moderate roasted malt character provides a coffee-like base, while hop aroma remains very low, superseded by the rich adjunct and barrel bouquet.
Taste. Initial impression is an explosion of bittersweet chocolate and creamy toasted coconut. The mid-palate reveals the complexity of the house base, featuring deep roasted grains and burnt caramel. Barrel maturation contributes layers of whisky, oak tannin, and a touch of sweet sherry. Bitterness is moderate to firm, providing necessary structure to balance the rich malt sweetness. The finish is long and lingering, dominated by cacao and a smooth, warming alcohol presence.
Mouthfeel. Full-bodied and exceptionally creamy, possessing a viscous, coating texture. Carbonation is moderate. Significant but well-integrated alcohol warmth is present, providing a gentle glow without being harsh or fusel. No significant roast-derived astringency is detected.

For this special Christmas treat, we’ve raided our barrel program and hand selected our favourite barrels to blend. This beer consists of our house Imperial Stout base aged for 12 months in ex-Cape Byron Distillery Single Malt barrels, as well as 6 months in ex-sherry casks from The Walrus Distillery (a new project from friends of ours that is coming soon). Pouring jet black with an incredibly inviting mocha head. Straight away we get warming notes of rich chocolate, vanilla, toasted coconut and a healthy dose of whisky. All of these characters follow on the palate, complimented by a silky body with a real depth of malt complexity from an extended boil when brewing the base. Layers and layers of flavour coat your mouth as the adjuncts come together perfectly in unison. A nice hit of whisky and sherry comes in at the end to round everything out nicely. This is one of our favourite BA stouts we’ve ever released and it’s the perfect nightcap after some Christmas pud.
