This Imperial Stout is a decadent, opaque collaboration that fuses brooding roast with opulent pastry elements. Intense aromas of dark chocolate and espresso meld with the floral, citrus-edged notes of Australian Orange Blossom honey and a delicate hint of bee pollen. On the palate, a lush, velvety sweetness from added lactose supports a rich tapestry of toasted macadamias and almonds, providing a distinct, oily nuttiness. Despite the bold 11% ABV, the warmth is smooth and integrated, leading to a lingering, bittersweet finish where roasted grains and earthy honey notes harmoniously collide to create a complex, harmonious profile.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a dense, deep tan head of moderate retention that leaves thick lacing. High viscosity is apparent through visible legs on the glass.
Aroma. High intensity. Dominant notes of bittersweet chocolate, roasted coffee, and dark caramel are layered with the floral perfume of Orange Blossom honey. Toasted macadamias and almonds provide a rich, nutty secondary layer, complemented by subtle dark fruit esters of plum and raisin.
Taste. Rich and decadent initial impression. Layers of sweet cream and cocoa give way to deep roasted grain and black chocolate. The mid-palate features the specific floral sweetness of Orange Blossom honey and a distinct savory-sweet nuttiness from macadamias and almonds. Moderate bitterness provides essential balance against the lactose and honey, finishing with a lingering, warming harmony of roast and honeyed floral notes.
Mouthfeel. Full and viscous body with a chewy, velvety, and luscious texture enhanced by lactose. Carbonation is low to moderate. A smooth, noticeable alcohol warmth is present but well-integrated, contributing to a luxurious, coating feel without being cloying.

Baltic Noir is a brand new Imperial Pastry stout, brewed in collaboration with our new friends from Pohjala in Tallinn, Estonia. Pohjala are well known for their daring and out of the box stouts as well as their use of native ingredients to flavour their beers. For this decadent and heavy hitting stout we have used a kettle addition of lactose, a whirlpool addition of bee captured pollen, a mid fermentation addition of Australian native Orange Blossom honey from Bee One Third and finally a conditioning addition of toasted macadamias and almonds. Don't let the delicacies of this beer fool you, it is also big, brooding and bold. It's a complex mix of deep and rich notes of dark chocolate and roasted coffee blended with sweet and floral notes of orange blossom honey, then finishing with a subtle toasted nuttiness.
