This creative Gose, a collaboration with Eternal City Brewing, reimagines the historical German style through a Mediterranean lens. A bright pineapple juice presence leads the sensory profile, offering tropical sweetness that perfectly counterpoints the sharp lactic acidity. Complex aromatics of fresh sage and floral pink pepper dance over a bready wheat base, while coriander adds a familiar citrus lift. The signature salt addition provides a savory, mouthwatering depth that rounds out the finish. It is a vibrant, highly carbonated, and exceptionally refreshing sour ale where herbal, fruity, and saline notes achieve a harmonious, dry balance.
Appearance. 3-4 SRM. Pale yellow with a moderate, tight-bubbled white head that shows fair retention. Unfiltered and moderately hazy, with visible effervescence.
Aroma. Moderate to high intensity. Bright, tropical pineapple juice dominates, supported by an herbal sage undertone and spicy, floral pink pepper notes. Lactic tartness is present alongside a citrusy coriander character and a subtle, doughy wheat malt background.
Taste. Sharp, refreshing lactic sourness immediately hits the palate, followed by juicy pineapple and bready wheat malt. A distinct but restrained saltiness provides a savory counterpoint. Mid-palate complexity comes from herbal sage and a delicate, peppery snap from the pink pepper. Hop bitterness is negligible. The finish is bone-dry and acidic with a lingering pineapple and coriander aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. The salt creates a tingly, mouthwatering sensation on the tongue. No alcohol warmth is perceived, and the acidity ensures a crisp, non-cloying texture.
