This 2023 vintage honors the Polish Dwójniak tradition, blending equal parts Buckwheat honey and water to create a remarkably potent and viscous Sweet Mead. The Buckwheat honey asserts its dominance through a pungent profile of blackstrap molasses, toasted grain, and a distinctive earthy, barnyard-like musk. At 15% ABV, the sensory experience is defined by a deep, resonant warmth and a luxurious, syrupy mouthfeel. Intensely sweet but balanced by natural honey acids, it unfolds with layers of dark caramel and oxidized sugar, leaving a persistent, complex finish that highlights the raw, rustic power of its singular varietal ingredient.
Appearance. Dark amber to mahogany (SRM 25–35); brilliant clarity with high viscosity manifested as heavy, slow-moving legs; still, with no head or carbonation.
Aroma. High intensity; pungent buckwheat honey character featuring blackstrap molasses, scorched sugar, and earthy, rustic notes; significant but clean alcohol presence; no hop or malt aroma.
Taste. Immediate, intense honey sweetness; rich flavors of buckwheat honey, specifically toasted grain, treacle, and deep caramel; moderate acidity provides essential balance to the high residual sugar; no hop bitterness; finish is long, sweet, and profoundly warming.
Mouthfeel. Full-bodied and syrupy; heavy mouthcoating viscosity; no carbonation; significant, well-integrated alcohol warmth; no astringency.
