This Belgian Golden Strong Ale is a masterclass in attenuation, utilizing Saison yeast and a traditional kettle sugar addition to achieve a remarkably dry, crisp finish. The sensory experience is led by a complex fermentation profile where esters of crisp apple, pear, and hints of unripe apricot and plum intertwine with distinctive clove and cracked black pepper phenols. Built on a foundation of ninety percent Pilsner malt with a touch of wheat and dextrin, the beer remains light and effervescent on the palate. While reminiscent of classic style examples, the unique yeast selection pushes spicy character to the forefront, balanced by herbal hop notes and a clean, warming alcoholic finish.

Appearance. Pale gold to medium yellow (4-5 SRM). Brilliant clarity with persistent, effervescent bubbles rising to a massive, rocky, long-lasting white head that leaves intricate lacing.

Aroma. High intensity. Dominated by fruit esters of pear and red apple, followed by secondary notes of unripe apricot. A prominent spicy yeast character brings clove and black pepper to the fore. The malt is nearly neutral with a faint grainy-sweet Pilsner character, complemented by a soft, perfumy alcohol note and herbal hops.

Taste. Initial palate of pome fruit and stone fruit esters gives way to a sharp, spicy mid-palate of clove and black pepper. The malt flavor is lean and crackery, supporting a medium-high perceived bitterness. Extremely dry finish with a lingering peppery aftertaste and a clean, herbal hop presence that lasts into the finish.

Mouthfeel. Medium-light body with a very high, effervescent carbonation level that scrubs the palate. Smooth, noticeable alcohol warmth is present but well-integrated, lacking any harshness or solvent qualities.
