Mad Goose is a refreshing Ordinary Bitter that leans into modern sensibilities with its zesty hop profile. The foundation is built on rich, bready Maris Otter and sweet Caragold malts, accented by Wheat Malt for a crisp texture. Hallertau provides a clean, firm bitterness, while late additions of Cascade deliver bright citrus overtones and a floral bouquet. Poured a light copper, it offers a harmonious balance between toasted grain and grapefruit zest. This sessionable ale finishes dry and clean, making it an exceptionally drinkable example of a classic style updated with vibrant, citrusy hop character.

Appearance. Light copper color (approx. 10 SRM). Displays brilliant clarity with a moderate off-white head that shows decent retention and light lacing.

Aroma. Moderate intensity featuring bready and biscuity malt notes from the Maris Otter. The hop character is prominently citrusy and floral, driven by Cascade, with a subtle spicy background from Hallertau. Low fruity esters are present, typical of a clean English fermentation.

Taste. Initial impression is crisp and zesty. The malt flavor provides a solid base of toasted bread and light honeyed sweetness from Caragold. Hop flavor is dominated by grapefruit and lemon zest.
