This Imperial Stout presents an indulgent sensory journey, beginning with a deep core of dark chocolate and roasted espresso. Six months in Oak Smoked Rum barrels introduces layers of toasted coconut and sticky molasses, seamlessly integrated with the base beer's robust malt profile. The Beaufort Spirit influence provides a sophisticated smokiness that winds through the aroma and palate, elevating the natural coffee character. It balances the decadence of sweet rum with a drying oak tannin and a lingering, warm finish. Complex and full-bodied, it showcases a masterful harmony between roasted bitterness and spirit-forward sweetness, perfectly capturing the brewer's intent for a layered, hybrid stout.
Appearance. Opaque, obsidian black (SRM 40+). Pours with a thick, persistent, tan-to-deep-brown head that leaves dense lacing. High viscosity is apparent in the legs on the glass.
Aroma. High intensity. Dominant roasted coffee and rich dark chocolate aromas are layered with aromatic oak, vanilla, and toasted coconut from the rum barrels. Distinctive notes of smoky molasses and a warming rum spirit presence provide depth, while low earthy hop notes are tucked behind the malt and wood.
Taste. The initial impression is of luxurious bittersweet chocolate and cold-brew coffee. Mid-palate reveals complex barrel-derived flavors of charred oak, sweet rum, and a subtle, campfire-like smokiness. The molasses provides a dark sugar sweetness, balanced by a firm roasted bitterness typical of the style. The finish is long and warming, with a lingering echo of smoky spirit and dried dark fruit.
Mouthfeel. Full-bodied and viscous with a creamy, velvety texture. Carbonation is moderate-low, enhancing the richness. A significant, well-integrated alcohol warmth is present, smooth rather than harsh, with a touch of drying wood tannin on the tongue.
