Pulfer Brewery

This Wild Specialty Beer presents a decadent, smoothie-like profile that pushes the boundaries of traditional sour ales. A vibrant explosion of raspberries and blueberries creates a lush, jammy foundation, while the addition of biskvit and cinnamon transforms the experience into a liquid pastry. The aroma is reminiscent of a freshly baked berry cake, blending fruity tartness with warm, spicy undertones. On the palate, the unfermented fruit provides a heavy, dessert-sweet body that balances the underlying lactic acidity. It is an indulgent, thick-textured brew where the spice and biscuit notes harmonize with a bold, berry-forward finish.

Appearance. Opaque, deep vibrant purple with a thick, saturated violet head that shows remarkable persistence and heavy lacing due to the high concentration of fruit solids.

Aroma. High intensity aromatics of jammy raspberry and blueberry dominate, followed immediately by sweet, doughy biscuit notes and a distinct dusting of warm cinnamon. Subtle lactic tartness provides a clean, acidic backdrop to the rich, cake-like sweetness.

Taste. The initial impression is of a rich berry coulis and sweet sponge cake. High fruit sweetness from unfermented raspberries and blueberries is balanced by a moderate lactic sourness.
