Requiem is an opulent Imperial Stout that commands attention through its profound depth and layered complexity. Sixteen months of maturation in Woodford Reserve bourbon barrels, which previously cradled Martinique rum, imparts a sophisticated tapestry of charred oak, spicy vanilla, and a hint of cane sugar funk. The addition of sour cherry puree during fermentation introduces a bright, tart contrast to the decadent foundation of bittersweet chocolate and espresso. This interplay of dark roasted grains and stone fruit creates a seamless, vinous profile. Velvety and viscous, the experience concludes with a warming, spirit-forward elegance that highlights its extended cellar aging and masterful wood integration.

Appearance. Jet black and completely opaque. It pours with a thick, deep tan head that shows moderate retention, eventually subsiding to a persistent ring. High viscosity is evident by the visible legs that coat the glass when swirled.

Aroma. High intensity with a rich blend of roasted coffee, bittersweet chocolate, and dark cocoa. The addition of sour cherry provides a bright, tart fruitiness that complements deeper esters of plum and raisin. Barrel aging contributes prominent notes of toasted oak, vanilla, and a complex spicy rum character.

Taste. An initial impression of decadent dark chocolate and espresso is quickly met by the sharp, complex tang of sour cherries. The mid-palate reveals charred wood, caramel, and an earthy sweetness from the rum barrel. A firm bitterness provides balance to the massive malt body, leading into a long, lingering finish of roasted grain, dark fruit, and spirituous warmth.

Mouthfeel. Full-bodied, chewy, and exceptionally oily with a velvety texture. Carbonation is low to moderate, enhancing the luscious weight on the palate. A noticeable, smooth alcohol warmth is present but well-integrated, lacking any harshness.
