Appearance. Deep coppery-brown (18-22 SRM). Huge, dense, and moussy light tan head with excellent persistence and lacing. Usually clear, though a slight haze may be present in such a strong ale.
Aroma. High intensity with a complex blend of rich malt and dark fruit. Prominent caramel, toffee, and honey notes provide a bready-toasty base. Strong esters of raisins and dried plums are complemented by moderate spicy phenols from the abbey yeast, specifically black pepper and light vanilla. Alcohol is soft and perfumy, never solvent-like.
Taste. Initial impression is malty-rich and complex. Deep caramel, toffee, and honey flavors dominate the palate without any roasted or burnt character. Esters of raisins and dark fruit harmonize with peppery yeast phenols. Bitterness is medium-low to moderate, providing enough balance to prevent a cloying finish. The aftertaste is smooth and lingering, finishing moderately dry to balanced-sweet.
Mouthfeel. Medium-full body with a creamy, luxurious texture. Carbonation is high but smooth, not sharp. Noticeable alcohol warmth is present but well-integrated and never hot. Low astringency.
