Hot Cakes #3 is an indulgent Wild Specialty Beer that translates the decadence of a fruit-laden cheesecake into a vibrant sensory experience. This pastry-inspired ale explodes with a high-intensity bouquet of ripe mango and tropical passion fruit, supported by the stone fruit depth of apricot and a sharp, refreshing lemon lift. The masterful addition of vanilla provides a creamy, confectionary backbone that perfectly mimics a velvety cheesecake filling. At 5.5% ABV, the beer balances its lush, smoothie-like fruit density with a clean lactic acidity, resulting in a complex, sweet-tart profile that is both refreshing and deeply flavorful.

Appearance. SRM 5-7; saturated, opaque golden-orange hue resembling fruit nectar. Pours with a thick, mousse-like off-white head that shows moderate to low retention due to fruit solids.

Aroma. High intensity aromatics of fresh mango puree and tangy passion fruit. Secondary notes of sun-ripened apricot and bright lemon zest are present, underpinned by a prominent, sweet vanilla cream character and a clean, lactic sourness.

Taste. Initial impression is a burst of sweet tropical fruit, dominated by mango and passion fruit. The mid-palate introduces apricot fleshiness and a sharp lemon citrus bite. Vanilla provides a lingering, pastry-like sweetness that rounds out the acidic finish. Bitterness is non-existent, allowing the fruit and fermentation acids to provide balance.

Mouthfeel. Full-bodied and viscous with a creamy, smoothie-like texture. Moderate carbonation provides enough lift to prevent the heavy fruit solids from becoming cloying. Negligible alcohol warmth and no astringency.
