A sharp, lemony lactic acidity is immediately apparent, yet it is beautifully softened by the floral honey notes and wildflower nectar derived from the mead casks. The bourbon influence introduces a sophisticated layer of toasted oak and subtle vanilla, which intertwines with a crackery malt backbone. Effervescent and bright, the beer finishes exceptionally clean with a lingering tartness and a whisper of wildflower honey, showcasing a masterful balance between aggressive acidity and barrel-derived sweetness.

Appearance. Deep gold (4-6 SRM); large, dense white head with poor retention typical of high acidity; slight haze with fine, rising bubbles.
