This 2021 vintage Saison showcases a sophisticated fusion of rustic farmhouse character and Pacific Northwest terroir. The base ale is transformed through maturation in Sangiovese and Cabernet barrels, imparting deep vinous complexity and subtle toasted oak. The addition of wild red huckleberries introduces a vibrant, tart berry brightness that integrates seamlessly with the classic spicy phenols and fruity esters of the yeast. Expect an elegant, bone-dry profile where the earthy, rustic grains are elevated by wine-forward tannins and a delicate, forest-fruit acidity, resulting in a refined and highly effervescent expression of the Saison style.
Appearance. Luminous deep amber with distinct ruby and magenta highlights from the berries and red wine barrels. Topped by a dense, pink-tinted ivory head with excellent retention and delicate lacing. Slight haze is present from the fruit additions and lack of filtration.
Aroma. High intensity aromatic profile featuring a complex blend of tart red huckleberries, wild raspberries, and cherry-like esters. These are layered over a spicy yeast backdrop of cracked black pepper and a sophisticated vinous character of red grape skin and seasoned oak.
Taste. Initial tartness from the wild berries leads into a rustic, grainy malt mid-palate. Notes of red currant and pomegranate from the Sangiovese and Cabernet barrels provide depth, while the fermentation contributes a firm peppery spice. The finish is exceptionally dry and crisp, with a lingering vinous acidity and minimal hop bitterness.
Mouthfeel. Medium-light body with very high, effervescent carbonation that provides a prickly, refreshing sensation. A mild tannic structure from the oak and berry skins adds a subtle, pleasant astringency. Alcohol warmth is well-integrated and low.
