Sisyphus presents a sophisticated interpretation of an Oud Bruin, forged through two years of patient oak barrel aging. The influence of diverse wild yeast blends yields a complex, matured profile defined by rich layers of dark fruit—think dried black cherries and plums—intermingled with a soft, vinous sourness. The extended time in wood introduces subtle nutty nuances and a refined sherry-like oxidation that complements a deep malt base of caramel and toasted chocolate. At 8.3% ABV, it carries a graceful warmth that balances the sweet-and-sour interplay, resulting in a smooth, deeply layered Belgian-style brown ale with a lingering, sophisticated finish.
Appearance. Dark reddish-brown with good clarity. Features a light tan head with average retention and modest lacing.
Aroma. High intensity with rich malt notes of caramel, toffee, and a hint of chocolate. Strong fruity esters reminiscent of raisins, plums, and black cherries are balanced by a moderate, aged sourness and a lightly nutty, sherry-like oxidation from the oak. Hop aroma is absent.
Taste. Complex initial impression of dark caramel and burnt sugar followed by intense fruitiness of prunes and cherries. The wild yeast provides a soft, integrated sourness that creates a signature sweet-and-sour balance. Malt flavors of chocolate and treacle persist through the finish. Hop bitterness is restrained and hop flavor is absent. Finish is long and warming with a pleasant malty-tartness.
Mouthfeel. Medium-full body with low to moderate carbonation. No astringency. Significant alcohol warmth is present but remains well-integrated and smooth.
