This Brett Beer represents an intricate blend of four barrels, featuring a thirty-month-aged Brettanomyces Claussenii component and a six-month maceration with fresh rhubarb. The aroma presents a vibrant farmhouse profile, blending rustic notes of wet hay and earthy funk with a garden-fresh complexity. On the palate, the experience is a dedicated ode to rhubarb, delivering a bright, tangy tartness that integrates seamlessly with the dry, highly attenuated character of the Brettanomyces strains. The long maturation period results in a sophisticated, layered profile where the vegetal snap of the fruit meets the deep, funky soul of traditional wild fermentation.
Appearance. Pours a hazy, pale gold with distinct rosy-pink highlights from the rhubarb. The off-white head is thin and dissipates relatively quickly to a fine collar, exhibiting moderate lacing.
Aroma. High intensity featuring a complex farmhouse character. Prominent notes of barnyard funk, damp hay, and aged leather from the Brettanomyces Claussenii are layered over a sharp, tangy scent of fresh-cut rhubarb and subtle tropical fruit esters.
Taste. Initial impression is a bright burst of tart rhubarb and underripe berries. The mid-palate reveals complex earthy funk and a very low, cracker-like malt presence. The finish is bone-dry and crisp, with a lingering tangy aftertaste and a hint of rustic wood. Bitterness is low, allowing the fruit acidity to provide structure.
