This decadent Imperial Stout pours an impenetrable obsidian, immediately releasing a dense bouquet of dark chocolate and salted caramel. The influence of cacao dominates the aromatic profile, supported by a toasted grain character and a subtle nuttiness derived from the riz soufflé. On the palate, the 11% ABV provides a significant but smooth warmth, framing layers of bittersweet cocoa and the savory-sweet richness of beurre salé. Deep roasted malts provide a sturdy backbone for the caramel sweetness, while the puffed rice adds a unique toasted depth. It is a harmonious, dessert-leaning stout that balances intense roast with a velvety, indulgent finish.
Appearance. Jet black and completely opaque (40 SRM). Topped with a thick, dense, dark tan head that shows moderate retention. High viscosity is evident as oily legs slowly descend the glass.
Aroma. High intensity with a rich blend of bittersweet chocolate and espresso-like roast. Strong notes of salted caramel and toffee are present, alongside a distinctive toasted cereal aroma from the puffed rice. Low esters suggesting dried plums and raisins emerge as it warms, complemented by a smooth, well-integrated alcohol presence.
Taste. An intense initial impression of dark cocoa and rich caramel. The malt character is deeply roasty with layers of burnt grain and toast, balanced by the savory complexity of salted butter. Hop bitterness is medium-high but softened by the significant residual sweetness and adjunct character. The finish is long and lingering, featuring bittersweet chocolate and a hint of salt, remaining velvety without being cloying.
Mouthfeel. Full-bodied, chewy, and highly viscous with a luscious, velvety texture. Carbonation is moderate-low, providing just enough lift to the heavy body. A noticeable, smooth alcohol warmth is present but remains pleasant rather than sharp.
