Prizm Brewing Co.’s Dawn is a vibrant Double IPA that showcases an assertive sensory profile driven by a massive 25 g/L dry hop. Hand-selected Strata from Barcelona delivers pungent notes of passion fruit and berry-like depth, while Yakima-sourced Citra layers in bright grapefruit and lime zest. The heavy addition of flaked oats creates a remarkably smooth, silky texture that carries the high hop intensity without becoming abrasive. A clean, neutral malt base supports the 8% ABV, which provides a gentle, integrated warmth. This beer finishes crisp and dry, leaving a lingering, resinous trail of tropical fruit and firm, clean bitterness.
Appearance. Deep gold to light orange (7-9 SRM). Pours with a thick, persistent white head that leaves significant lacing. While the style allows clarity, the heavy use of flaked oats and massive dry-hopping lends a soft, modern haze.
Aroma. High intensity hop aroma dominated by tropical fruits. Strata provides distinct passion fruit and strawberry notes with a hint of resinous dankness, while Citra adds powerful layers of mango and citrus peel. A light, crackery malt background is present but remains secondary.
Taste. The initial impression is a burst of citrus and stone fruit, followed by a firm, resinous bitterness. Malt flavors are clean and unobtrusive, providing just enough support for the intense hop load. The finish is medium-dry with a long-lasting aftertaste of grapefruit pith and berry.
Mouthfeel. Medium body with a smooth, almost creamy texture from the flaked oats. Carbonation is moderate-high, providing a lively prickle that balances the density. Alcohol warmth is noticeable but smooth and well-integrated.
