Just You Wait is a vibrant, sessionable Belgian Single that marries traditional monastic table beer character with a modern hop profile. Utilizing Cryo Mosaic and El Dorado hops, the sensory experience begins with delicate floral aromas interwoven with tropical fruit and citrus. The palate delivers a bright punch of lemon and satsuma, nuanced by hints of melon and resinous pine. A soft, grainy-sweet malt foundation supports these bold flavors, while the Belgian yeast adds a sophisticated layer of spicy phenols. At a sessionable 3.6% ABV, it maintains a crisp, dry finish with a firm bitterness that invites another sip.

Appearance. Pale yellow to light gold (3–4 SRM). Brilliant clarity with a moderate, persistent, billowy white head and characteristic lacing.

Aroma. Moderate to high intensity hop-forward profile featuring citrus, grapefruit, and tropical fruit notes. Supported by medium-low spicy, peppery phenols and low fruity esters of pear. Malt character is low, presenting as crackery or bready.

Taste. Initial malt flavor is light with honeyed biscuit and grainy-sweet notes. High bitterness and high attenuation drive a very dry, crisp finish. Hop flavors of lemon, orange, and pine are prominent, balanced by moderate spicy yeast phenols and fruity esters. The hop bitterness and spicy yeast character linger into the clean aftertaste.

Mouthfeel. Medium-light body that remains smooth and not thin. High carbonation provides a prickly sensation. No alcohol warmth.
