Pressure Drop Brewing Cheese is a vibrant Hazy IPA that captures a pungent, dank essence through a masterful use of Strata and Mosaic hops. The pour displays a golden, opaque glow, releasing a heavy bouquet of overripe mango, passionfruit, and distinct strawberry. While the initial impression is intensely fruity, a resinous, herbal dankness provides a complex counterpoint. The mouthfeel is exceptionally soft and medium-full, allowing the tropical hop flavors to coat the palate without being interrupted by harsh bitterness. It finishes with a clean, off-dry smoothness, perfectly integrating its strength with a lush, fruit-forward character.

Appearance. Deep golden color (SRM 6) with a heavy, opaque haze and a luminous shine. Supports a thick, meringue-like white head with high retention and significant lacing.

Aroma. High intensity hop aroma featuring pungent, dank resin alongside overripe mango, passionfruit, and strawberry. A light, bready malt character sits in the background, complemented by moderate fruity fermentation esters.

Taste. Initial impression is a high-intensity burst of tropical fruit and berry hop flavors. Low, grainy malt sweetness supports a complex profile of mango and herbal dankness. Bitterness is moderate but perceived as low due to the soft body. Finishes clean and off-dry with a lingering fruity aftertaste.

Mouthfeel. Medium-full body with a soft, pillowy, and smooth texture. Moderate carbonation provides a gentle lift, while the 7.4% ABV contributes a noticeable but well-integrated alcohol warmth without any harshness.
