Prairie Bomb! is an opulent sensory journey, merging a massive Imperial Stout base with a complex quartet of adjuncts. Deeply roasted malt notes form a foundation for intense, fresh-ground Spaceship Earth espresso and rich cacao nibs. The addition of vanilla beans rounds out the profile with a silky, marshmallow-like sweetness, while ancho chili peppers provide a subtle, earthy fruitiness and a gentle, creeping warmth that balances the decadence. This Spice, Herb, or Vegetable Beer is a masterclass in integration, where the high ABV provides a structured backbone for layers of dark chocolate, dark fruit esters, and a lingering, spicy complexity.

Appearance. Opaque, midnight black (SRM 40+). Pours with a thick, creamy, tan to mocha-colored head with excellent persistence and heavy, glass-coating lacing.

Aroma. High intensity. Dominant aromas of freshly roasted espresso and dark chocolate fudge. Secondary notes of floral vanilla bean and dried dark fruits like raisin and plum. A distinctive earthy, smoky pepper character from the ancho chiles emerges as it warms, supported by a rich, bready, and slightly charred malt backbone. No hop aroma.

Taste. Initial impression is intensely rich and sweet, followed by layers of bittersweet cacao and robust coffee. Malt flavors of toasted crust and espresso roast predominate. The ancho chili peppers contribute a mild, savory spice and dark fruit tang rather than sharp heat. Vanilla softens the mid-palate, leading to a complex finish where roasted bitterness, alcohol warmth, and a delicate peppery tingle linger.

Mouthfeel. Full-bodied and viscous with a chewy, velvet-like texture. Carbonation is moderate to low, enhancing the creamy mouthfeel. A significant but well-integrated alcohol warmth is present, complemented by a mild, warming capsicum sensation from the chiles.
