This Imperial Stout, a collaboration between Prairie Artisan Ales and American Solera, lives up to its name with a massive sensory profile. Aged in Pursuit bourbon barrels, it presents an intense fusion of dark-roasted grains and spirit-forward complexity. The absence of adjuncts allows the base beer’s rich layers of bittersweet chocolate and espresso to shine, complemented by the barrel’s contributions of charred oak, spicy vanilla, and rich caramel. Expect deep esters of prune and raisin that meld with a significant, smooth alcohol presence. It is a bold, velvety experience that emphasizes the interplay between heavy roasting and meticulous barrel aging.

Appearance. Jet black and completely opaque. It pours with a thick, creamy, deep tan head that shows moderate retention. High viscosity is evident, with prominent legs forming on the glass due to the high alcohol content.

Aroma. High intensity aroma featuring a rich blend of roasted coffee and dark chocolate. The Pursuit bourbon barrels contribute clear notes of vanilla, toasted oak, and a hint of coconut. Moderate esters suggest dried figs and raisins, with a clean but noticeable alcohol warmth.

Taste. Initial impression is of intense bittersweet chocolate and roasted malt. The mid-palate reveals layers of espresso and black licorice. Hop bitterness is firm but balanced by the massive malt backbone. The finish is long and warming, featuring lingering notes of bourbon-soaked oak and dark fruit.

Mouthfeel. Very full-bodied and chewy with a luscious, velvety texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present, consistent with the high strength, but remains well-integrated rather than harsh.
