Popihn Sauvages

This complex Wild Ale presents a sophisticated interplay of fruit and funk, driven by a two-year maturation process. The addition of red and green rhubarb imparts a distinctive tartness and subtle vegetal-fruit depth, reminiscent of green apple and tart berries. Brettanomyces contributions are evident through layers of wet hay, earthy leather, and aged orchard fruit. The blend—refined in Chablis barrels and bourbon barrels—introduces vinous minerality and a whisper of toasted oak. Bone-dry and highly attenuated, the beer showcases a harmonious balance between the vibrant rhubarb acidity and the rustic, nuanced profile of a well-aged mixed fermentation.

Appearance. Deep gold to coppery-orange with subtle pinkish hues (SRM 8-12); off-white head with moderate retention and light lacing; slight to moderate haze from the rhubarb and mixed fermentation.

Aroma. High intensity with pronounced earthy funk, horse blanket, and wet hay from Brettanomyces; sharp, tangy rhubarb notes suggesting green apple and red berry; vinous white wine characteristics from Chablis barrels; subtle hints of vanilla and toasted oak from the bourbon barrel presence; no hop aroma.

Taste. Initial sharp tartness from rhubarb; dry malt profile with cracker and sourdough notes; complex Brettanomyces flavors of hay, leather, and dried fruit; the Chablis barrel influence adds a mineral, lemony finish while the bourbon barrel provides structural oak tannins; very low bitterness; finish is bone-dry, crisp, and lingeringly tart.

Mouthfeel. Medium-light body; high carbonation; very low alcohol warmth; crisp and effervescent; moderate astringency from rhubarb and oak tannins.
