This commanding Imperial Stout showcases the elegant influence of a twelve-month residency in Monbazillac casks. A viscous, jet-black pour yields a complex bouquet where deep roasted coffee and bittersweet chocolate collide with fragrant, honeyed floral notes and dried apricots. The palate is decadently layered, transitioning from intense charred grain to a luxurious mid-section of marzipan and toasted hazelnuts. While the base beer provides a firm bitterness and dark fruit depth, the dessert wine finish imparts a sophisticated sweetness and stone fruit character. Velvety and warming, it offers a harmonious balance between robust roast and refined botrytized wine elegance.

Appearance. Jet black and opaque (SRM 40+). A dense, deep tan head shows moderate retention, leaving thick lacing. High viscosity is apparent in the slow-moving legs on the glass.

Aroma. Intense and multifaceted. Dominant aromas of dark chocolate and espresso are lifted by fragrant, honey-like floral notes from the Monbazillac cask. Secondary layers of dried apricots, sweet marzipan, and a hint of toasted hazelnut blend with vinous alcohol and subtle dark fruit esters like raisins.

Taste. Initial impact is rich bittersweet chocolate and roasted malt, quickly followed by the cask’s influence of stone fruits and nuttiness. Flavors of dried apricot and almond paste provide a sweet counterpoint to the firm hop and roast bitterness. The finish is long and warming with a lingering hazelnut and cocoa character.

Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate. A smooth, noticeable alcohol warmth coats the palate without being sharp or solventy.

It will develop over time but is excellent to drink right now.
