New England IPA A stonefruity, sticky, pina colada beer brewed with two different versions of Simcoe. Look, we’re pretty much on record for our love of Sabro here at Polly’s. From that first meeting back in early 2020 when we brewed the cult classic Oh My, all the way to the present day, there’s just something about this hop that people either love or hate that has us completely enchanted by its ultra-unique quirks and idiosyncrasies.

It always felt as though a version of Oh My should have been a Sabro pairing with Simcoe but for whatever reason these two cornerstone hops have never crossed paths on our brewing journey, until now that is.

Wanting to let our brewers play with their recipes a little more, we figured why not make that stonefruity, sticky, pina colada beer, but with two different versions of Simcoe for a little flourish?
