Polly’s Brew Co.

Rustic Rouge is a vibrant Red IPA that celebrates the heritage of craft brewing through a modern lens. The sensory experience is led by a singular, bold showcase of Amarillo hops, delivering high-intensity notes of orange marmalade and zesty grapefruit. This citrus brightness is anchored by a complex grist featuring red crystal rye malt, providing a spicy, toasted depth and a rich mahogany hue. The palate is defined by an aggressive bitterness that balances the initial malt sweetness, leading to a crisp, lingering finish. It is a nostalgic yet refined tribute to the interplay of resinous hops and specialty grains.

Appearance. Deep copper to reddish-amber (11–17 SRM). Brilliant clarity with a persistent, creamy, off-white to light tan head that leaves dense lacing.

Aroma. High intensity hop aroma featuring prominent notes of orange peel, grapefruit, and floral blossoms characteristic of Amarillo. The malt profile provides a supportive, moderate backbone of spicy rye, toasted bread, and a hint of caramel sweetness. Clean fermentation profile.

Taste. Initial impression of sweet citrus and marmalade hop flavor. The malt follows with a spicy, peppery character from the red crystal rye malt, balanced by toasted crust and light toffee. Firm, aggressive hop bitterness provides a strong counterpoint to the malt, leading to a dry, crisp finish with a lingering resinous and citrusy aftertaste.

Mouthfeel. Medium body with moderate to high carbonation. A slight silkiness from the rye is present, alongside very light alcohol warmth. Smooth and free of astringency.

There was just something about growing up as beer drinkers as the craft beer movement was growing. Being in that moment where everything was new and shiny and exciting, queues around the corner from a bottleshop for the latest hype release, texts from mates to say a first pour was happening and you simply had to get back into town to try it, you just had to be there to truly appreciate it. Whilst craft beer has grown up and (whisper it quietly) joined the mainstream, we wanted to harken back to those days where there was a genuine excitement about new styles and techniques brewers were employing to poke their heads above the crowd. Rustic Rouge is our callback to the wonderful simplicity, but tremendous complexity of the Red IPA; a style that seems to have fallen from the radar in more recent years of haze craze. A single-hop showcase of Amarillo plays off a flourish from our usual grist bill with red crystal rye malt to create a beer that has an aggressively bitter bite, with a bright burst of marmalade sweetness.
