Cashmere is a single-hop IPA (brewed with Cashmere hops, natch) which brings big tropical fruit notes.

When we found out we could get access to some Cashmere this year we were positively giddy with excitement. Descended from OG Polly’s favourite Cascade married up with UK hop Northern Brewer, Cashmere holds a lot of the characteristics of its US parent, but with an extra level added on top that make it in our opinion, one of the most underrated varietals on the planet today. Deploying 50kg into this beer, we’re going in hard on this IPA and get a whole host of coconut, peach and tangerine on the aroma of this beer, with some added lemongrass, melon and an edge of grapefruit just to finish things off. Welcome to the party, Cashmere!”

The Hop Studio – Cashmere Pale Ale 5.4%

Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love – showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. Cashmere has long been intertwined with our more recent history here at Polly’s; first landing with us in 2021 and becoming a favourite amongst our brewers for the distinctive silky mouthfeel this hop has a tendency to add when utilised in our beers. A delicate, but robust varietal, Cashmere really seems to come to life when used in hop forward styles such as our own. Prominent aromas and flavours of lemon and lime, with melon and peach are very much at the forefront, whilst more subtle notes of coconut, lemongrass, and candied oranges linger in the back of this incredible single hop showcase pale ale.
