The palate is bone dry and robust, showcasing a complex interplay of skin-like tannins and heritage apple flavors that provide a firm, traditional structure. At 7% ABV, it delivers a noticeable, well-integrated warmth that complements the medium-full, mouth-coating texture. This is a quintessential English Cider, emphasizing the depth of West Country fruit without the distraction of carbonation, finishing with a long, pleasantly astringent aftertaste.
Appearance. Medium yellow to deep gold. Completely still with no head or carbonation. Clarity is clear to slightly hazy, typical for an unfiltered heritage cider.
Aroma. High intensity apple character with complex bittersweet notes. Aromas of apple skin, dried fruit, and a light earthy or phenolic farmhouse funk. No hop or malt character present.
Taste. Bone dry and high in fruit intensity. Flavors of heritage apples and skins dominate, supported by a firm tannic bitterness. Very low sweetness. The finish is long and dry with a lingering astringent quality and clean fermentation character.
