This Imperial Stout presents an opulent sensory profile shaped by its maturation in Pedro Ximenez Sherry and American Rye Whiskey barrels. The aroma is saturated with dark chocolate, espresso, and intense vinous notes of sun-dried raisins and figs. A thick, caramelized rye malt foundation delivers a spicy, bready depth that marries seamlessly with decadent cocoa and burnt sugar flavors. The barrel aging contributes nuances of oaky vanilla and a sharp rye spice, culminating in a lingering, velvety warmth. It is an indulgent, complex experience where the sherry sweetness balances the robust roasted grains and a firm, supportive bitterness.

Appearance. Jet black and completely opaque (40+ SRM). Pours with a dense, persistent deep tan head with moderate lacing. High viscosity is apparent as thick legs form on the glass.

Aroma. High intensity with a rich blend of bittersweet chocolate, roasted coffee, and dark caramel. Prominent vinous esters of prunes and raisins are complemented by the American Rye Whiskey influence, adding notes of spicy grain and toasted oak. Alcohol is noticeable but smooth and well-integrated.

Taste. Bold initial impression of dark chocolate and caramelized rye malt. The mid-palate features a complex interplay of sweet dried fruits, including dates and black currants, against a backdrop of charred grain. High bitterness is present but softened by the residual sweetness of the Pedro Ximenez Sherry casks. The finish is long and bittersweet with a lingering warmth.

Mouthfeel. Full to very full-bodied with a chewy, velvety, and luscious texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present without being sharp or solventy.
