This Imperial Gose presents a bold, modern interpretation of the historical style, amplified to a robust 8% ABV. The sensory journey begins with an intense lactic tartness, immediately met by the deep, forest-like character of bilberry. The fruit provides a wild, tannic sweetness that is beautifully countered by the savory, resinous earthiness of sage. While the base offers a doughy wheat malt foundation, the signature salt addition provides a mouthwatering roundness that enhances the fruit’s vibrancy. It concludes with a crisp, acidic snap and a lingering herbal finish, balanced by a subtle, well-integrated warmth characteristic of its imperial strength.

Appearance. Deep purple to reddish-violet in color; opaque with a moderate haze. Topped with a medium, pink-tinted head that shows moderate retention and light lacing.

Aroma. High intensity lactic tartness and bright, wild berry esters. The bilberry provides a concentrated dark fruit aroma, while the sage adds a distinctive savory, herbal, and slightly peppery layer. Low bready wheat malt; no hop aroma.

Taste. Initial impression is sharply acidic and refreshing. Pronounced tart bilberry flavors dominate, followed by a savory, earthy sage character. The salt is noticeable but restrained, providing a briny, mouthwatering quality that rounds out the bready malt. Low bitterness with a very dry, fully-attenuated finish that highlights lingering fruit skins and herbal notes.

Mouthfeel. Medium-full body, significantly weightier than a standard Gose due to the higher ABV and fruit density. High carbonation with a tingly, effervescent sensation on the tongue. Noticeable but smooth alcohol warmth.
