This massive Imperial Stout, a collaboration with De Struise, presents an opulent sensory journey defined by its 17.5% ABV and dual-barrel aging. The complex grist, featuring Chocolate, Brown, and Biscuit malts along with Roasted barley, delivers an intense foundation of burnt toast and toffee. Two years in Pedro Ximenez and Heaven Hill casks infuse the liquid with luxurious notes of raisin confit, vanilla sauce, and leather. First Gold and Bramling X hops contribute a subtle piney lift against a backdrop of roasted chestnuts and dried figs. The result is a viscous, contemplative masterpiece with a lingering, tobacco-tinged warmth and immense malt depth.
Appearance. Inky black and opaque (40+ SRM). It supports a dense, mocha-colored brown head with moderate retention. Noticeable viscosity is evident through heavy legs on the glass.
Aroma. High intensity with a rich blend of roasted chestnuts, dried figs, and prunes. Significant barrel influence provides vanilla-laced coconut and burnt sugar. Subtle herbal and pine notes from First Gold and Bramling X hops emerge, alongside a deep, vinous alcohol presence and dark chocolate.
Taste. Initial impression is of intense malt complexity, showcasing toffee, burnt toast, and dark chocolate. Mid-palate reveals raisin confit and sweet red berries, transitioning into savory leather and tobacco. A firm roasted coffee bitterness and chewy oak tannins provide balance against the dark sugar sweetness. The finish is long and warming with lingering vanilla.
Mouthfeel. Full-bodied and exceptionally viscous with a chewy, velvety texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present, reflecting the very high gravity without being solventy.
