This Wild Specialty Beer is a masterclass in terroir, showcasing the rustic complexity of New York’s Hudson Valley. A 100% spontaneous fermentation yields a profile of bright lactic acidity and earthy, leathery funk. The addition of fresh raspberries and blackberries from Wright's Farm introduces a vibrant layer of tart red berries and deep, seedy fruit depth. Turbid mashing and oak aging contribute a soft, structural undercurrent that balances the sharp acidity. Expect a dry, refreshing finish where the woody tannins from the oak interlace with the lingering essence of summer berries and a distinct, wild fermentation character.
Appearance. Deep ruby to magenta hue (SRM 20-25) with a slight hazy luminescence; a thin, pale pink head forms quickly but dissipates into a fine collar. Minimal lacing.
Aroma. High intensity with a complex bouquet of funky Brettanomyces, featuring notes of damp hay, leather, and barnyard. This is immediately followed by a burst of fresh raspberries and the darker, jammy scent of blackberries. Low oak-derived vanillin and a subtle grainy wheat background are also present.
Taste. High acidity leads the palate, characterized by a sharp, clean lactic tang. The fruit flavors are prominent but dry, echoing fresh raspberries and tart blackberry skins. Low hop bitterness allows the fermentation acids to dominate. The mid-palate reveals subtle oak tannins and a cracker-like malt backbone, leading to a bone-dry, puckeringly tart finish with a lingering berry seed character.
Mouthfeel. Medium-light body with high carbonation that enhances the perceived acidity. Very low alcohol warmth. A slight tannic grip from the fruit skins and oak provides structure without being harsh.
