This Brett Beer captures the soul of the Hudson Valley through a vibrant refermentation on biodynamically grown Rose Hill plums. It presents a complex marriage of wild yeast funk and deep stone fruit. Aromas of sun-ripened plum skins and dried hay lead into a palate defined by high attenuation and a clean, rustic dryness. The Brett character offers subtle notes of leather and earth that complement the fruit without overpowering it. Expect a bright, slightly tart finish with a delicate tannic structure from the fruit skins, showcasing a masterfully balanced farmhouse elegance with a crisp, refreshing profile.
Appearance.Deep gold to amber with distinct ruby and magenta highlights from the plum refermentation; hazy to cloudy. The off-white head is frothy with moderate retention and light lacing.
Aroma.High intensity; dominant notes of fresh plums and dark stone fruit are layered over a rustic Brett profile of wet hay, leather, and mild barnyard funk. Low bready malt and virtually no hop aroma, allowing the fruit and yeast to lead.
Taste.Initial impression is bone-dry and fruit-forward. Vibrant plum flavors evolve from sweet flesh to tart, tannic skins. The yeast provides a complex, earthy funk with hints of mild spice. Hop bitterness is very low, providing just enough structure. The finish is crisp, lingering, and remarkably clean with a fruit-skin snap.
Mouthfeel.Medium-light body with high, prickly carbonation that enhances the fruit’s brightness. Very low alcohol warmth. Subtle tannic astringency from the plum skins adds a pleasant grip to the otherwise smooth mouthfeel.
