Quince delivers a sophisticated sensory profile that marries the rustic charm of a New York wild ale with the elegant, floral aromatics of estate-grown fruit. This Brett Beer opens with a vibrant bouquet of jasmine, honeyed pear, and rose petals, driven by the unique quince addition. The wild yeast fermentation contributes a layer of tropical stone fruit and a whisper of earthy hay, while time in oak barrels provides a structural backbone of soft wood tannin and vanilla. Effervescent and exceptionally dry, it balances its delicate fruit sweetness with a crisp, nimble finish that highlights the brewery’s signature farmhouse character.

Appearance. Deep gold to light amber (6–9 SRM) with a slight, natural haze. Pours with a moderate white head that shows moderate retention and leaves light, wispy lacing on the glass.

Aroma. High intensity aromatics featuring floral quince, reminiscent of rose and ripe pear. The Brettanomyces character is prominent with notes of pineapple, apricot, and a light, rustic funk like sun-dried hay. Very low grainy malt and a faint, toasted oak presence in the background.

Taste. The initial impression is brightly fruity and highly attenuated. Flavors of tart quince and white peach dominate, supported by a clean, cracker-like malt base. Hop bitterness is very low, allowing a light, non-lactic organic acidity and Brett-driven earthiness to provide balance. The finish is bone-dry and lingering, leaving a floral and slightly spicy aftertaste.
