This Farmhouse Cherry Barn Ale presents a rustic interpretation of a Saison, defined by its vibrant fruit integration and wild fermentation character. The aroma is led by bright, tart cherries and a distinctive nutty, marzipan-like nuance from the fruit pits, layered over a peppery yeast profile. On the palate, the experience is exceptionally dry and effervescent, showcasing a soft, grainy malt base that supports flavors of red fruit and floral, earthy hops. A crisp acidity provides a refreshing counterpoint to the subtle alcohol warmth, finishing clean with a lingering spicy aftertaste and a whisper of wild farmhouse funk typical of the style.

Appearance. Deep amber with distinct rose-colored highlights (10–14 SRM). Features a dense, long-lasting ivory head with a slight pink tint, excellent lacing, and a hazy, unfiltered appearance.

Aroma. High aromatic intensity. Leading notes of tart red cherries and cherry pits (almond-like) are balanced by moderate spicy black pepper phenolics. Low earthy, floral hop character and a light, grainy malt backbone provide a rustic foundation.

Taste. Initial impression of tart cherry skin followed by a dry, grainy malt flavor. Fermentation-derived black pepper and light clove phenolics are prominent. Hop bitterness is moderate but accentuated by a very high attenuation and light acidity. Finish is bone-dry and crisp with a lingering spicy, fruity aftertaste.

Mouthfeel. Medium-light body with very high, effervescent carbonation that provides a prickly, refreshing sensation. Subtle, well-integrated alcohol warmth is present without being harsh. No astringency.
