The profile is driven by Poughkeepsie-grown rainbow carrots, which impart a subtle root-vegetable sweetness and vegetal depth, complemented by the sharp, warming zing of fresh ginger. Fermentation with native wild yeast lends a complex bouquet of tropical fruit and mild farmyard funk, while aging in Hudson Valley white oak provides a structured, woody backbone. The result is a bone-dry, highly attenuated wild ale where the spicy ginger heat integrates seamlessly with the rustic, earthy character of the carrots and the delicate vanillin of the oak.
Appearance. Deep gold to soft amber with a slight orange tint from the rainbow carrots; generally hazy with a fine-textured, off-white head that possesses moderate retention and light lacing.
Aroma. Moderate to high intensity; prominent spicy ginger and earthy carrot notes are layered over a complex Brettanomyces profile of pineapple, apricot, and a touch of hay. Subtle background notes of dry white oak and a hint of wildflower honey are present, without any lactic sourness.
Taste. The palate is exceptionally dry and crisp. Initial flavors of spicy ginger provide a gentle heat, followed by the savory, earthy sweetness of carrots. The fermentation character contributes tart stone fruit and a light barnyard funk. Hop bitterness is low, allowing the ginger and oak tannins to provide structure. The finish is clean, lingering with ginger spice and a woody, mineral quality.
