This Dark Barn Beer offers a complex fusion of rustic farmhouse character and the malt-forward profile of a British Brown Ale. Deep aromas of toffee and nutty Roasted Barley lead into a palate defined by light chocolate notes and toasted biscuit. While the malt provides an initial sweetness, it is sharply balanced by the brewery’s signature dry, wild fermentation finish. Earthy hop undertones complement the subtle tartness, creating a sophisticated profile that transitions from rich caramel to a clean, woody, and slightly funky conclusion. It is a nuanced, dark ale that balances roasted depth with vibrant, living yeast character.
Appearance. Deep mahogany with dark reddish-brown highlights (approximately 18–22 SRM). It features a moderate, creamy tan head with fair retention and slight lacing. Clarity is clear to slightly hazy, typical of unfiltered farmhouse production.
Aroma. Moderate to high intensity. Pronounced notes of milk chocolate and toasted nuts from the roasted barley are layered over a base of caramel and toffee. Low earthy hop notes provide a background for subtle fruity esters, such as dried plum, and a light, spicy, wild yeast funk.
Taste. Initial impressions of sweet caramel and nutty malt are quickly followed by a distinctive chocolatey finish. Low to medium-low bitterness allows the malt and yeast character to shine. The mid-palate reveals toasted bread and subtle cocoa, which gives way to a very dry, slightly tart, and earthy finish that avoids heavy roasted bitterness.
Mouthfeel. Medium body with medium-high carbonation that provides a lively, scrubbing texture. Alcohol warmth is light and well-integrated at 6% ABV. It exhibits very low astringency despite the use of roasted grains, finishing clean and crisp.
