This reimagined Piwo Grodziskie presents a delicate sensory profile, defined by the clean, elegant aroma of oak-smoked wheat malt. At a sessionable 3% ABV, the beer features the distinctive addition of bison grass, which imparts subtle, aromatic layers of vanilla, woodruff, and sweet hay. The appearance is brilliantly clear and pale straw, crowned by a massive, billowy white head. On the palate, the smokiness is restrained and sophisticated, never veering into harshness, and is balanced by a crisp, grainy malt backbone. Its bone-dry finish and lively carbonation make it exceptionally refreshing, offering a nuanced, herbal twist on a traditional Polish classic.
Appearance. Pale straw (3 SRM). Brilliant clarity with high effervescence. Features a large, dense, persistent snowy-white head with excellent lacing.
Aroma. Moderate-low intensity. Clean, subtle oak smoke dominates, avoiding heavy phenolic or acrid notes. A distinctive herbal character from the bison grass provides nuances of vanilla, tonka bean, and dried grass. Low grainy-sweet wheat malt; no fruity esters or diacetyl present.
Taste. Initial impression is crisp and highly refreshing. Light grainy wheat flavor is quickly balanced by a gentle, clean oak smokiness. The bison grass adds a complex herbal layer reminiscent of cinnamon and woodruff. Moderate hop bitterness provides structure. Finishes very dry and clean with a short, pleasant aftertaste of wood smoke and herbs.
Mouthfeel. Very light body. High carbonation creates a prickly, effervescent sensation on the tongue. No alcohol warmth. Crisp and thin but not watery; no smoke-derived astringency.
