Pivovar Vik TAKE IT EASY
This American IPA showcases a modern, vibrant profile driven by high-temperature Kveik fermentation. The yeast contributes distinct citrus notes of lemon and lime, which intermingle with a tropical explosion of mango and pineapple from a heavy-handed addition of El Dorado and Strata hops, including Cryo formats. Centennial hops provide a firm, resinous counterpoint and a sharp grapefruit zest. Despite the lush fruit character, the Kveik yeast ensures high attenuation, resulting in a remarkably dry finish and exceptional drinkability. This is a lean, hop-forward ale where complex esters and modern hop varieties create a layered, refreshing sensory experience with a clean, supporting malt backbone.
Appearance. Medium gold (approx. 7 SRM) with a slight haze from heavy dry-hopping. Features a medium-sized, white head with good persistence and delicate lacing.
Aroma. High intensity hop aroma dominated by tropical fruit notes of mango and pineapple. Secondary citrus layers of lemon, lime, and grapefruit zest are present, supported by a hint of resinous pine. Low, clean, grainy maltiness provides a neutral background.
Taste. Initial impression is hop-forward with intense mango and grapefruit flavors. Medium-high bitterness is well-integrated, supported by a low, grainy malt character. The fermentation profile is largely clean but highlights specific citrus esters. The finish is very dry and crisp with a lingering, resinous, and fruity aftertaste.
Mouthfeel. Medium-light body with a smooth, lean texture due to high attenuation. Moderate to medium-high carbonation provides a refreshing bite. Features very light, smooth alcohol warmth and no astringency.

KVEIK IPA. Díky kvasnicím, známe tím, že kvasí ve velmi vysokých teplotách (mezi 35-40 °C) je pivo hodně prokvašené, čímž je dosaženo příjemně suchého závěru a pivo je krásně pitelné. Samotné kvasnice nechávají v pivu i citrusové tony, zejména v podobě citronu a limetky. Použili jsme v největším podílu chmel El Dorado a Strata, které dávají pivu aroma sladkého tropického ovoce, hlavně manga a ananasu a byly použity i v Cryo formě na studené chmelení. Celé to doplňuje chmel Centennial, který přidá do chuti nezaměnitelnou chuť grapefruitu s malou dávkou pryskyřice.
