This Wild Specialty Beer offers a sensory voyage to the tropics, functioning as a vibrant, high-gravity Sour Ale inspired by a Piña Colada. The profile is defined by an intense aromatic burst of sun-ripened pineapple and tangy passion fruit, immediately followed by a decadent, creamy layer of coconut. The addition of lactose imparts a silky, mouth-coating sweetness that elegantly tames the sharp lactic acidity of the base. Appearance. Opaque, pale gold with a saturated yellow hue from the fruit additions. Pours with a moderate white head that shows fair retention for the style, eventually settling into a thin collar with minimal lacing.
Aroma. High intensity aromatics of fresh-cut pineapple and sharp passion fruit. A dominant, sweet coconut presence provides a creamy counterpoint, while a clean lactic sourness underpins the fruit. No hop aroma or significant malt character is present.
