Pivovar Stern

Pivovar Stern Grinch is an elegant Specialty IPA crafted in the Brut style, often described as the champagne of beers. Utilizing rice flakes and specific enzymes to achieve a bone-dry finish, this brew showcases a remarkable level of attenuation. The 7% ABV is hidden within a light, effervescent body that allows the New World hop profile to shine with intensity. Expect a bright bouquet of white wine, tropical melon, and citrus notes. Despite the low IBU, the extreme lack of residual sugar amplifies the perceived bitterness, resulting in a crisp, sparkling, and highly refreshing sensory experience that finishes clean and dry.

Appearance. Pale straw to light gold (2-4 SRM). Brilliant clarity with a large, white, mousse-like head that exhibits moderate persistence and fine-beaded, champagne-like effervescence.

Aroma. High intensity hop aroma featuring notes of white grape, honeydew melon, and bright lemon zest. Malt aroma is nearly absent, offering only a neutral, cracker-like hint. Clean fermentation profile with no significant esters or phenols.

Taste. Initial impression is exceptionally dry and crisp. Hop flavors of passion fruit and vinous white wine dominate, supported by a very low, neutral malt presence. Bitterness is perceived as moderate despite the lower IBU due to the complete lack of residual sugar. The finish is bone-dry and clean, with a lingering citrus zest aftertaste and no harshness.

Mouthfeel. Very light body with a sharp, spritzy carbonation that provides a lively sting on the tongue. Smooth finish with very low, well-integrated alcohol warmth. No astringency or creaminess present.
