Pivovar Permon Sour Face
This vibrant Wild Specialty Beer, a collaboration between Permon and Antoš, presents a striking sensory profile defined by its dual fruit infusion. Intense aromas of sharp cherry and tropical passionfruit dominate the nose, supported by a subtle, earthy and resinous note from the addition of Columbus hops. The palate is defined by a bracing lactic acidity that amplifies the natural tartness of the cherry, while the passionfruit provides a lush, exotic depth. A lean malt backbone allows the wild fermentation characteristics to shine, finishing bone-dry with a lingering, tangy fruit-skin pucker and a clean, refreshing effervescence.
Appearance. Deep reddish-pink to ruby hue (12-18 SRM) with a moderate haze from fruit solids. The head is light pink, initially frothy but fading to a thin, persistent collar with minimal lacing.
Aroma. High intensity; immediate notes of fresh, tart cherries and pungent, tropical passionfruit. A subtle earthy and spicy hop character from Columbus is present. Clean, sharp lactic acidity with very low fruity esters and no significant malt aroma.
Taste. Initial impression is sharply tart and refreshing. Dominant flavors of sour red cherry and bright passionfruit. Malt flavor is minimal, providing just enough structure to support the high acidity. Hop flavor is low, contributing a slight herbaceous note. Bitterness is low, as the acidity provides the primary balance. The finish is very dry and crisp with a lingering fruit-skin tartness.
Mouthfeel. Medium-light body with a crisp, puckering quality. High carbonation provides a lively, scrubbing mouthfeel. Minimal alcohol warmth. A very slight astringency from fruit skins and acids enhances the overall perception of dryness.
