This barrel-aged Imperial Stout presents a sophisticated sensory profile, forged through twenty-four months of maturation in bourbon barrels. The experience is dominated by intense layers of bittersweet dark chocolate and heavy roasted coffee, seamlessly integrated with the aromatic influence of charred oak. Distinguishable notes of warm vanilla, toasted coconut, and a touch of caramel from the bourbon-soaked wood permeate the aroma and flavor. While maintaining its American Stout roots, it features a firm resinous hop bitterness that balances the rich, velvety malt backbone. The result is a complex, full-bodied beer where smooth alcohol warmth and dark malt depth culminate in a dry, lingering finish.
Appearance. Jet black in color and completely opaque. It supports a large, persistent, and dense head of light brown foam that leaves thick lacing on the glass.
Aroma. High intensity aroma featuring strong roasted coffee and dark chocolate. Prominent barrel-derived notes of vanilla, oak, and a hint of bourbon are present. A low resinous hop character and light fruity esters complement the smooth, warming alcohol presence.
Taste. Moderate to very high roasted flavors of bittersweet chocolate and espresso. Initial malt sweetness quickly gives way to a medium-high hop bitterness and charred oak character. Subtle citrus and resinous hop flavors are present, finishing dry with a lingering roasted quality and smooth bourbon warmth.
Mouthfeel. Full-bodied with a creamy, velvety texture. Carbonation is moderate to high, providing a lift to the heavy malt weight. A moderately strong but smooth alcohol warmth is present, with very low roast-derived astringency.
