Pivovar Clock Slash is a masterfully crafted Czech Premium Pale Lager defined by its traditional triple decoction mash and an extensive ninety-day maturation period. The resulting profile is anchored by a deeply complex, bready malt foundation derived from Czech grains. This richness is elegantly balanced by a prominent hop bouquet featuring the classic spicy character of Saaz, also known as Źateck%ý poloran%ý červeňák, alongside the herbal and floral intensity of the Most hop variety. The extended lagering ensures a remarkably smooth, integrated character with a clean, soft bitterness and a lingering, rounded finish that epitomizes the elegance of Bohemian brewing heritage.
Appearance. Deep gold (approx. 5 SRM) with brilliant clarity. Pours with a dense, creamy, long-lasting white head that leaves intricate lacing.
Aroma. Moderate to high intensity featuring rich, bready, and slightly toasted malt notes. The hop character is prominent, showcasing spicy Saaz and herbal, floral Most notes. Clean fermentation profile with a faint, optional hint of buttery diacetyl.
Taste. Initial impression of complex, bready malt sweetness transitions into a firm but rounded bitterness. Flavors of fresh-baked crust and toasted grain are punctuated by spicy and floral hop notes.
