This collaborative brew reimagines the traditional Kölsch through a modern, high-gravity lens. A robust base featuring torrefied flaked oats and barley provides a smooth, rounded mouthfeel that carries a massive hop profile. Amarillo hops contribute vibrant layers of orange and floral citrus, while the innovative addition of CRYO Hop X PHANTASM unlocks intense tropical thiols and stone fruit complexity. While it retains the clean fermentation character and soft, dry finish typical of a Kölsch, the elevated 7% ABV and Double Dry Hopping transform the delicate style into a contemporary, hop-forward powerhouse with significant sensory depth.
Appearance. Medium yellow to light gold in color. While the style traditionally demands brilliant clarity, the heavy use of flaked grains and dry hopping may result in a slight, atypical haze. Features a delicate white head with moderate retention.
Aroma. High intensity aromatics featuring low grainy-sweet malt notes. The profile is dominated by a complex hop character of orange, grapefruit, and exotic tropical fruits. Subtle yeast-derived esters of pear and apple are present but take a backseat to the modern hop-derived thiols.
Taste. Initial impression is a blend of grainy malt and honey-like sweetness, quickly overtaken by intense citrus and tropical fruit hop flavors. Bitterness is medium and well-integrated. The finish is soft, dry, and slightly crisp, avoiding any sharp or harsh edges despite the high alcohol content. Very clean fermentation profile ensures the hops remain the focus.
Mouthfeel. Medium-full body, which is heavier than typical for the style due to the 7% ABV and flaked adjuncts. Smooth and creamy texture from the oats, with moderate carbonation and a noticeable but well-integrated alcohol warmth.
