These vinous notes are bolstered by the expressive Abbey style yeast, which contributes a "punchy" spicy character and esters typical of high-gravity Tripels. Appearance.Deep gold to light amber (6–12 SRM). Large, creamy white head with excellent persistence and lacing. Clear to slightly hazy.
Aroma.Moderate to high intensity. Strong notes of white grape and tropical fruit from Nelson Sauvin hops, paired with spicy, peppery phenols and fruity esters like pear and citrus from the Abbey style yeast. Low bready malt sweetness in the background.
Taste.Initial impression of white wine, gooseberry, and tropical hop flavors. High bitterness is balanced by a lean, bready malt profile. The Abbey style yeast adds a significant peppery and clove-like complexity. The finish is very dry and crisp with lingering hop resins and a clean, firm bitterness.
Mouthfeel.Medium-light to medium body. High carbonation creates a lively, effervescent sensation. Notable but smooth alcohol warmth is present, appropriate for the strength, without being solventy.
