This opulent Fruit Mead presents a decadent tapestry of deep red and black fruits, driven by a lush combination of Bing Cherries, Black Currants, and Red Currants. The honey base provides a viscous, velvety backbone that supports intense layers of tart currant skins and dark, fleshy stone fruit. Complex notes of forest berries and honeyed floral tones dominate the palate, balanced by a refined acidity and a subtle tannic grip from the fruit skins. Appearance. Deep ruby to dark burgundy with brilliant clarity. This is a still mead with no head formation or lacing, though it exhibits significant viscosity with thick legs forming on the glass.

Aroma. High intensity of dark fruit and floral honey. Prominent notes of sweet, ripe Bing Cherries are layered with the earthy, musky character of Black Currants and the bright, acidic punch of Red Currants. Mouthfeel. Full-bodied and viscous with a heavy, mouth-coating texture. Carbonation is absent, characteristic of a still mead. There is a noticeable but smooth alcohol warmth that never becomes hot or harsh. A slight tannic astringency from the currant skins provides structure.
