This Double IPA presents a bold, tropical, and dark interpretation of the style, expertly utilizing its high-impact ingredients. The hop profile is driven by intensive New Zealand varieties, with Nelson Sauvin and Motueka providing distinct notes of crushed white wine grapes and zesty lime, while Pacific Sunrise adds deep layers of berry and citrus. These aromatics are amplified by the addition of pineapple, mango, and passion fruit juices, creating a lush, saturated fruit character. Despite its dark hue, the palate remains focused on hop intensity, balancing subtle roasted malt undertones with a firm bitterness and a smooth, warming finish. It is a complex, high-impact sensory experience that bridges tropical sweetness and resinous depth.
Appearance. Opaque, deep ebony to black (35-40 SRM) with a thick, creamy, tan-colored head that shows excellent persistence and leaves significant lacing on the glass.
Aroma. High intensity with a prominent tropical bouquet of ripe mango, acidic passion fruit, and sweet pineapple. Nelson Sauvin provides a distinct gooseberry and white grape character, while Motueka contributes lime zest. A supportive, low-intensity dark malt presence suggests cocoa and light toast, with a clean fermentation profile and a hint of sweet alcohol.
Taste. Initial impression is a burst of juicy pineapple and tart maracuja. Mid-palate features complex hop layers of lemon peel and resinous pine. The malt character is clean and supportive, offering light chocolate and toasted bread flavors without harsh acridity. Bitterness is high and firm, balancing the fruity esters. The finish is medium-dry and lingering with a citrusy, hoppy aftertaste and smooth, integrated alcohol.
Mouthfeel. Medium-full body with a velvety, smooth texture and moderate carbonation. There is a noticeable but pleasant alcohol warmth. Very low astringency, maintaining high drinkability despite the dark malt and high hopping rate.
