Silver December captures the essence of a classic West Coast IPA with a vibrant, old school profile. An assertive aromatic burst of resinous pine and bright citrus leads the way, driven by a heavy-handed dry-hopping of Citra, Centennial, Columbus, and Amarillo. These varieties impart layers of grapefruit zest, earthy spice, and orange oil. The palate is decidedly dry and lean, allowing the sharp, clean bitterness to dominate against a subtle, grainy malt backbone. This clear, bright ale finishes crisp with a lingering bitterness, showcasing the pungent, dank character of Columbus and the floral elegance of Centennial in a high-octane, refreshing package.
Appearance. Deep gold color (approx. 7 SRM). Brilliant clarity with a tall, dense white head displaying excellent persistence and lacing.
Aroma. High intensity hop aroma featuring pungent pine, grapefruit, and damp earth. Citra and Amarillo contribute distinct lemon and orange citrus, while Columbus adds a resinous, spicy edge. Low grainy malt sweetness provides a neutral foundation. Clean fermentation profile with no significant esters.
Taste. Aggressive initial bitterness that persists through the finish. Prominent hop flavors of resinous pine, citrus peel, and a touch of floral spice. Low toasted malt character supports the hop-forward balance without adding sweetness. Extremely dry and crisp finish with a long, hoppy aftertaste and no harshness.
Mouthfeel. Medium body with a smooth, slightly oily texture from hop oils. Medium-high carbonation provides a prickly, refreshing sensation. A light, well-integrated alcohol warmth is present, reflecting the strength without being hot.
