This Double IPA pays homage to the foundational roots of American craft by showcasing Simcoe hops in a bold, unwavering display. The sensory experience is led by a high-intensity hop profile, where signature notes of sticky pine resin and pungent herbal qualities intertwine with bright citrus zest and a hint of earthy spice. At 8% ABV, the beer maintains a lean, supportive malt backbone that allows the firm bitterness to remain the protagonist. It captures the essence of a classic West Coast powerhouse, balancing a clean fermentation profile with an assertive, dry finish that emphasizes the multi-faceted character of Simcoe.
Appearance. Deep gold to light copper in color (7-9 SRM) with brilliant clarity. Pours with a moderate-sized, persistent off-white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring prominent notes of pine resin, grapefruit zest, and a distinct herbal, woodsy character. The malt is supportive and clean, presenting as neutral graininess. Fermentation is clean with a very low hint of fruity esters and a subtle, smooth alcohol presence.
Taste. A powerful hop-forward impression dominated by citrus oil and resinous pine. The bitterness is firm and moderately high, yet smooth and lacking harshness. A low, clean malt profile provides a crackery base that stays out of the way of the hops. The finish is quite dry with a long, lingering aftertaste of hop resins and pithy citrus.
Mouthfeel. Medium body with a smooth, slightly oily texture. Carbonation is medium-high, providing a crispness that enhances the dry finish. A well-integrated, gentle alcohol warmth is present without being solventy.
